How does Nos (nitrous) work? Also what does it mean to "spray" work?

In the show Pinks it says they "unroll" the car. That is the second question. If you can answer both automatic 10 points.

Nitrous oxide is sprayed into the cylinders to add more oxygen, this makes the tinder burn faster, giving you more horse power. The designate spray comes from the nitrous being sprayed into the engine.
